Preheat oven to 165 C (325 F). Set out a standard 23 x 13-cm (9 x 5-inch) loaf pan and line with a strip of parchment paper for easy removal, if desired.

Add eggs, ketchup, Italian seasoning, kosher salt and pepper to a large bowl and whisk until well combined. Stir in onion, mushrooms, parsley and oats. With your hands, mix in ground beef, just until combined. (Don’t over-mix or your meatloaf will be tough.) Transfer mixture to loaf pan and gently press to fill; smooth the top with a spatula or the back of a spoon.

Bake until the internal temperature reaches 71 C (160 F), 1 to 1¼ hours. Allow to rest for 10 minutes before serving. Slice and serve. Top with additional ketchup, if desired. Makes 8 servings.

45 mL (3 Tbsp) ketchup, plus more for topping (optional)
10 mL (2 tsp) Italian seasoning
10 mL (2 tsp) kosher salt or 5 mL (1 tsp) fine sea salt
2 mL (½ tsp) freshly ground black pepper
½ medium onion, finely chopped
225 g (8 oz) mushrooms, coarsely chopped
15 g (¼ cup) fresh Italian parsley, chopped
45 g (½ cup) old-fashioned rolled oats
680 g (1½ lbs) lean ground beef
